I wonder if I could get your opinion on something. One with The Force is such a strong card that I am planning to play 2 of them in the deck even though I realize one of them would most likely be a dead card because I want to make sure I get it out as quickly as possible. Is this wise, or would I be better served with a different card instead?

Honestly, that's a personal call. With the small deck size, you'll likely see it eventually but putting the second in just makes it far more likely you'll see it early where it can be most beneficial.

My personal recommendation is to run 2 One with The Force with 2 Jedi Robes. This way you can hopefully draw the Robes for a turn one 2 shields, then turn 2 put One with The Force on the same character, putting the Robes in the discard pile for the 2 resource discount so you can afford One with The Force. You'll probably want to mulligan to get the Robes, if not OwtF too, in your opening hand.

How important do you guys think it is to get to 30 character points? This deck is very tempting but the missing 3 points is sort of scarry...

Have 30 points exactly isn't as important as having a synergistic deck. Some other options I have heard tossed around include Elite Rey with Elite Amidala, but then you are down 4 points, Elite Leia with Elite Amidala which is exactly 30 points but doesn't provide access to blue cards, etc... The important thing is Qui-Gon's ability and having access to blue cards like Patience and Return of the Jedi. Don't sweat 3 points.
